austin, texas is a city where some of the best food doesn’t come from brick-and-mortar restaurants. it comes from parking lots, street corners, and tiny kitchens on wheels.
i knew austin had food trucks. i didn’t know it had this many food trucks. there are food truck parks everywhere. not one or two. dozens. clusters of 3-8 trucks in parking lots with shared seating areas, scattered across the entire city. some open at 7am for breakfast burritos. others stay open until 3am serving spiced chicken over rice. the variety within a single park is staggering.
i spent 24 hours eating exclusively at food trucks. breakfast, lunch, dinner, and late-night. visited 8 trucks across 4 different parks. spent about $85 total. every single truck delivered.

i took one look at this burger and made a prediction: 10 out of 10. the prediction was correct.
the patties are cooked with crispy edges exactly as a smash burger should be. two slices of cheese, grilled onions, a zesty sauce. the seasoning is perfect. the bun is soft and buttery on the inside. every bite of the outer edges gives you that subtle crunch and a slight tiny bitterness from the char.
this is what smash burgers want to be when they grow up. the best smash burger i’ve had since my time in georgia. possibly the best in austin. the quality of the beef, the gooey cheese, the sauce, the bun. everything is dialed in.
if there was a burger pageant, this thing would be winning it.

2. fried chicken truck

the smell coming from this truck is borderline intoxicating. it would drive colonel sanders up the wall.
the spicy 3-piece: drumsticks and a thigh covered in herbs, fried garlic, and fried onions. the skin is as crunchy as fried chicken can ever get. maximized crunch. inside, a burst of juice. then the heat hits. spicy but not trying to hurt you. just adding to that intensely delicious umami flavour.
three pieces for $10 is a steal for this quality. this is the kind of fried chicken that could meet KFC in a dark alley, take all its future lunch money, and all the interest.
the chipotle cinnamon thigh is a revelation. sweeter, with cinnamon that somehow works perfectly with chicken. it tastes like eating a super crispy churro that’s also fried chicken. i never would have believed cinnamon works with chicken until this moment.
the chicken sandwich is a monster. giant piece of spicy crunchy chicken, cheese, onions, pickles, slaw sauce on a soft bun. the heat gets cooled down by the pickles. everything about it is perfect.
what to order: spicy 3-piece first. then the chipotle cinnamon thigh. then the sandwich if you’re still standing.
verdict: one of the best fried chicken in america. not exaggerating.
3. sonora hot dog truck

this place sent shivers down my spine.
the owner sources hot dog buns from a bakery in tucson run by sonorans (tucson is right across the border from sonora, mexico), and the flour tortillas for the burritos come directly from sonora. this is not a regular hot dog truck.
the sonora dog: bacon-wrapped hot dog with salsas, mustard, mayo, beans, all on a beautifully toasted bun. then there’s a roasted chili on the side. the chili is smoky, slightly sweet, then the heat smacks you. the hot dog is juicy and tender with beautiful umami from the bacon. the beans are soft and complement everything. the buttery bun holds it all together.
100 out of 10. this might be the best hot dog i’ve ever put in my mouth.
the carneasada burrito with sonoran flour tortilla is equally life-changing. the beef is toasty, juicy, tender, seasoned perfectly. the flavour is like a time bomb. by the third chew, pure bliss begins. the juice from the beef mixes with the salsa and the tortilla is incredible. the roasted pepper goes with everything.
what to order: get both. the sonora hot dog and the carneasada burrito. do not just get one.

4. northern chinese noodle truck

the first time i’ve ever seen northern chinese food at a food truck. cold noodles and chinese pork burgers (rou jia mo). the owner used to make this back in china.
the cold noodles are smooth, bouncy, and springy. wheat noodles with cucumbers, bean sprouts, and gluten. dunk them in vinegar and sauce, add hot oil. the mouthfeel is incredible. nice crunch from the cucumbers and sprouts.
the chinese pork burger (rou jia mo) is the real star. toasty bun, loaded with juicy chopped pork full of fat and skin. the juice has completely soaked into the bread. this is full-on legit chinese pork burger. in china, specifically xi’an, cold noodles and pork burger is the most popular food combo. and this truck nails it.
the dumplings are plump, juicy, homemade. chive and pork is the best variety. bite and slurp. pure happiness.
the trick to impressing your chinese friends: dunk the pork burger into the noodle sauce. trust me.
what to order: cold noodles + pork burger combo. add dumplings.

near downtown / $10-12 / 9/10
found this at 10:30pm near my hotel. unassuming food truck selling grilled chicken over rice. the kind of place you walk past without looking twice.
the chicken is loaded with cumin and spices. pretty tender. rice is super fragrant and spiced up. three different sauces. the heat builds slowly. your lips start tingling. there are little chunks of potatoes mixed in.
it’s perfect late-night food. doesn’t feel overly heavy or unhealthy. open until 3am. i seriously considered getting a second order to take back to the hotel. that’s how good it is.

biscuits and gravy is one of the most underrated breakfast dishes. this truck takes the concept and loads it up: three fluffy biscuits covered in peppery gravy, topped with scrambled eggs, potatoes, sausage, bacon, and cheese.
putting scrambled eggs on biscuits and gravy is genius. it’s a full breakfast over biscuits. the biscuits are soft on top with toasty bottoms. the gravy is nice and peppery. the different textures from potatoes, eggs, sausage, and bacon make every bite interesting.
innovative concept. i’m surprised it’s the first time i’ve encountered this.
what to order: the village (the loaded one)
verdict: biscuits and gravy deserves more recognition, and this truck is making the case.
7. puffy taco truck

birria puffy tacos. the first time i’ve seen puffy tacos outside of san antonio, and these are sturdier than the ones i had there.
the taco shell is crispy on the edges, soft in the middle, soaking up amazing juice from the birria. the meat is juicy. there’s a layer of gooey stretchy cheese on the bottom. the puffy shell absorbs all that umami-filled juice from the birria.
the heat element hits hard and keeps building. my mouth was on fire by the end, but in the best possible way.
what to order: birria puffy taco
verdict: better puffy tacos than san antonio. there, i said it.
8. fresh fruit ice cream
food truck park / $5-7 / 8/10
real fruit ice cream. not “fruit-flavoured” ice cream. real blueberries mixed into the cream. you definitely taste the fresh fruit. rich, thick, creamy.
this truck gets nonstop traffic. people pull up specifically for this. it was the coldest day to be eating ice cream, but the food doctor ordered it after the spicy puffy tacos.
what to order: blueberry or whatever seasonal fruit they have
verdict: the perfect closer to a spicy meal.

- food truck parks are clusters of trucks with shared seating. you can eat from 3-4 different trucks in one stop.
- cash is helpful but most trucks take cards now. still, bring $20 cash as backup.

- many trucks don’t open on sundays. check hours before making the trip.
- the late-night trucks (open until 2-3am) are a genuine asset if you’re staying up late.
